6 tomatillos
⅔ cup onion, finely chopped
⅔ cup plum tomato (approx. 3), seeded and finely chopped
6 tablespoons fresh cilantro, finely chopped – heaping
2 tablespoons fresh lime juice
1½ teaspoons salt
5 ripe peeled avocados, seeded and coarsely mashed
2 jalapeño peppers, finely chopped (seeded for less spicy)
2 Serrano peppers, finely chopped (seeded for less spicy)
2 garlic cloves, minced
PREPARATION
To prepare guacamole, peel papery husk from tomatillos; wash, core, and finely chop. Combine tomatillos, onion, and remaining ingredients; stir well. Serve with tortilla chips. Serves a party!
